Rekrutmen Maya Ubud 2020Job Descriptions :
The Executive Chef has the full responsibility to take care all aspects in the kitchen operational like kitchen administration, inventory control, scheduling, preparation, quality control, staffing, training, and budget control.
DUTIES & RESPONSIBILITIES:
Assuring that all pre-preparations are executed by following approved standard by hotel management
as follow :
· Establish Standard Purchase Qualification
· Establish Standard Purchase Specification
· Decide proper stock of raw materials (meats, vegetables and fruits) and groceries.
· Proper storage of all stocks according to the their qualifications such as temperature and humidity for perishable and semi perishable food and groceries (Storage method)
· Establish standard portion size for a la carte (beef, poultries, lamb, fishes, veal, pork or games)
· Standard Recipe (portion size, taste, presentation)
· Assuring that all preparations are executed based on hotel forecast, regular menus provided at restaurants, bars, room service, spa, or for special events.
· Assuring that all food products are produced in high standard quality of food (portion size, taste, presentation and hygiene)
3. New menu designing and Menu cycle
At least every 6 months, new menus for all the restaurants, room service, etc. should be prepared by the Executive Chef and he or she should make menu cycle or rotation for theme regular buffet, chef special, regular events or special events. Also he/she should give the recipe costing of each item to FB. Director and cost control for considering of the selling price.
Coordinate with Engineering Department to plan maintenance schedule of kitchen equipment, working area ( walls, lighting, tiles, greased tap, drainage, air condition, exhaust, water sprinkler, heat detector, water hydrant, fire extinguisher ) and assuring that all supporting equipment mentioned previously are applied properly. Check list will be beneficial.
5. Cleanliness, Hygiene and Sanitation
· Assuring that all working area are always kept clean and also all employees have to have the sense of personal cleanliness, hygiene and sanitation when performing their duty.
· Assuring all staff to have medical check up every 6 months.
6. Staffing and Scheduling
· To designate staff at each section according to their capability and assuring that each section are well covered with staff based on the budget allocated.
· Make sure that all staff and sections are being scheduled properly according to the necessity.
Executive Chef likewise performs as follow :
· Able to suppressant the quality of the raw materials purchased
· To control the quality of product
· Staff productivity
· Departmental cost and expenses controlling
· To affirm the final result of each product made based on the recipe designed to meet guest expectation and other feedback or and suggestion.
